Onion-flavoured Potatoes: An Irish recipe for an accompaniment of potatoes layered with onions that are cooked in milk.

Ingredients:

6 medium potatoes, peeled and finely sliced
1 large onion, peeled and finely sliced
400ml (1 2/3 cup) milk
22g (3/4 oz) butter
salt and freshly-ground black pepper, to taste

Method:

Layer the potato slices and onion slices in a shallow ovenproof dish. Sprinkle each layer with salt and black pepper as you add them.

Pour over the milk and dot with the butter. Transfer to an oven pre-heated to 180°C and bake for about 90 minutes, or until the potatoes are soft and golden brown on top.

Serve hot as an accompaniment.
