Ingredients:

225g pork, sliced into strips 3cm wide and 5mm thick
250g glutinous (sweet rice)
2 tbsp fish sauce (Nam Pla)
1/2 tsp salt
1 aubergine (eggplant), chopped (about 400g)
1 tbsp whole, dried chillies (small hot ones)
100g French beans but crosswise into 3cm long pieces
8 large dried Chinese mushrooms, soaked in water or 30 minutes then shredded
3 bay leaves
10cm square of dried pork skin (available from Asian stores) shredded into strips
a few lemon slices, to garnish
finely shredded strips of chilli, to garnish
1 spring onion, finely sliced into rings

Method:

Place the pork in a lightly-oiled roasting tin and place in an oven pre-heated to 180°C for about 15 minutes.

In the meantime add the glutinous rice to a stone mortar, add just enough water to cover and crush with a pestle.

Bring 1.75l of water to boil in a large pan then add the fish sauce, salt, pork, aubergine and chillies. Return the mixture to a boil and cook for 10 minutes, or until the aubergine is soft. Using a slotted spoon carefully transfer the aubergine and chillies to a mortar. Pound to a paste with a pestle then return to the pan along with the soaked mushrooms, French beans and the bay leaves. Return to a boil then stir the glutinous rice (and its soaking liquid) into the mixture before adding the pork skin.

Cook the stew for about 20 minutes, or until the rice has cooked through and is tender then transfer to a serving dish and garnish with the lemon slices, the chilli strips and the spring onion. Serve hot with boiled rice and vegetables.
