Obuoliniai Sausainiai (Lithuanian Apple Biscuits) is a traditional Lithuanian recipe for a classic biscuit (cookie) of a flour dough with apples, cinnamon and vanilla. Ingredients:

300g apples, peeled, cored and finely diced
1 tbsp lemon juice
125g plain flour
1 tsp baking soda
1 egg
70g sugar
1 tsp vanilla sugar
1/2 tsp ground cinnamon
1 tbsp sour cream
60ml oil
pinch of salt
icing sugar, to dust

Method:

Prepare the apples, place in a bowl then sprinkle with the lemon juice to prevent them from colouring.

Meanwhile, beat the egg with the sugar, vanilla sugar, cinnamon and salt until the sugar has all dissolved. Add the sour cream and oil and continue beating. Sift together the flour and baking soda into a bowl. Add the egg mix and the diced apples then stir to form a thick batter.

Line a baking tray with baking paper and drop the batter by the tablespoon onto the tray. When done, transfer to an oven pre-heated to 180°C and bake for about 16 minutes, or until the biscuits have puffed up and are golden brown on top.

Remove form the oven, allow to cool slightly then dust with icing sugar and set aside to cool completely before storing or serving.
