This is a traditional street food in Lesotho, a dish of sorghum grains with beans. It can be served as is, or it can be enriched with chopped pumpkin or wheat grains.
Soak the beans over-night in a large bowl of water.
Add the sorghum grains to a large pan and pour over 1l (4 cups) water. Add a pinch of salt, bring to a boil and cook for 20 minutes.
In the meantime, drain the beans then after the initial 20 minutes’ cooking add them to the cop along with 250ml (1 cup) water. Return to a simmer, cover and cook for 45 minutes, until the beans and sorghum are tender and the mixture is almost dry.
Take off the heat and set aside to steam for 5 minutes. Season to taste with salt and serve.
This can be served as a meal by itself or as an accompaniment.
