Nutty Rice Burgers: Classic British recipe for a vegetarian burger made from a blend of mushrooms, rice, breadcrumbs and walnuts bound with egg and brown sauce that are barbecue to cook and served with cheese and salad in sesame seed baps.

Ingredients:

1 tbsp sunflower oil
1 small onion, finely chopped
100g mushrooms, finely chopped
350g cooked brown rice
100g breadcrumbs
75g walnuts, chopped
1 egg
1 tbsp fruity brown sauce
dash of Tabasco sauce
salt and freshly-ground black pepper, to taste
oil, for basting
6 individual cheese slices

To Serve:
6 sesame seeds baps
onion slices
tomato slices
green salad leaves

Method:

Heat the oil in a frying pan, add the onion and fry for about 4 minutes, or until soft but not coloured. Add the mushrooms and cook for 2 minutes more then take the pan off the heat.

Add the rice, breadcrumbs, walnuts, egg and sauces to the pan and stir to combine. Season to taste with salt and black pepper then mix well.

Using your hands, shape the mixture into 6 patties. Set on a plate and put aside to chill in the refrigerator for at least 30 minutes.

Once chilled and firm, set the burgers on the grilled rack of a barbecue set over medium coals. Cook for about 6 minutes per side, turning once and basting frequently with the oil.

If liked, the burgers can be topped with a slice of cheese about 2 minutes before the end of the cooking time. About 4 minutes before the end of the cooking time barbecue the onion and tomato slices, turning them over half way through.

Toast the sesame seed baps on the barbecue. Serve the burgers in the baps, topped with the barbecued onion and tomatoes and a few green salad leaves.

Serve hot.
