This is the classic Togolese flavouring blend that is used almost ubiquitously in almost every Togolese dish.

Ingredients:

1 onion, grated
2 garlic cloves, crushed
2 tbsp finely-grated ginger

Method:

Mix all the ingredients together and use in any recipe calling for n'toutou.

Typically this blend is used either as a flavouring, often when boiling or frying or it's used as a marinade for fish and chicken.
