No-bake Cheesecake IV

No-bake Cheesecake is a traditional American recipe for a classic no-bake cheesecake with a biscuit (cookie) crust topped with a cream cheese, vanilla, sugar and lemon gelatine topping lightened with whipped cream. This is another recipe for a classic no-bake cheesecake that is lightened by the addition of whipped cream into the filling mix.

Method:

Prepare the Graham cracker cheesecake crust according to the recipe using it to cover the base and 5cm up the sides of a 25cm diameter springform pan. Bake according to the recipe instructions and set aside to cool.

In the meantime, combine the cream cheese and vanilla, beating until soft. Add the sugar and whisk until smooth and fluffy. In a small bowl combine the lemon gelatine and boiling water and whisk to combine then stir until completely dissolved. Allow to cool to room temperature before folding into the cream cheese mix. Now whip the whipping cream until it holds soft peaks then fold gently into the cream cheese mixture. Pour the resultant filling into the biscuit (cookie) crumb base and decorate with a few cracker crumbs. Cover with clingfilm and chill in the refrigerator over night, or until firm. When ready to serve, remove the sides of the pan then slice into wedges.
