Nnam Owondo: A Cameroonian recipe for a dish of balls made from smoked fish and peanut paste that are steamed in banana leaves to cook.

Ingredients:

200g paste made from toasted peanuts
200g smoked fish, crayfish or smoked meat
300ml warm water
salt and freshly-ground black pepper, to taste
banana leaves, for wrapping
twine

Method:

Finely chop your meat. Pour the water into a pan and bring to a boil. Pour half of the water into a heat-proof jug or bowl. Add the meat and the peanut butter to the remaining water in the pan.

Stir vigorously to avoid lumps and when the mixture begins to thicken stir in the reserved water. Cook until the oil separates out, then continue cooking over medium heat, stirring frequently, for 10 minutes more.

Season to taste with salt and black pepper and continue cooking until the mixture thickens sufficiently the you can form into balls.

Take off the heat and allow to cool until it can be handled. Shape into balls that will fit comfortably in your hand. Wrap these in banana leaves and secure with twine. Place in a steamer basket and cook over a pan of gently-simmering water for 30 minutes.

Serve with boiled plantain or with mitumba (plantain sticks).
