Mitumba (Cassava Sticks): A Cameroonian recipe for an accompaniment of a dough made from grated cassava that's steamed as sticks wrapped in banana leaves.
Ingredients:
4 cassava tubers
100ml red palm oil
200ml water
2 tsp salt
banana leaves (or greaseproof [waxed] paper) for wrapping
Method:
Peel and wash the cassava thoroughly. Place in a deep bowl cover with plenty of water and set aside to soak for 3 days. After this time, drain the cassava and grate finely then mash.
Season the cassava dough with the salt then alternately add the water and red palm oil to form a dough.
Shape the mitumba into sticks and cover these with banana leaves (or greaseproof paper). Tie the banana leaves securely in place then place in a steamer basket and steam over a pan of briskly simmering water for 3 hours (top up the water with boiling water, as needed).
Once the mitumba is cooked remove from the steamer basket. Place (still wrapped in banana) in an oven and bake in low heat for 30 minutes to dry them out.
Serve either alone, or as an accompaniment to other dishes.
