This is very much a Zimbabwean staple, similar to the 'pap' found throughout Africa and the Mealie Meal of Southern Africa.
Ingredients:
200g maize (corn) meal
1/2 tsp sugar
500ml water
2 tbsp peanut butter
225g white pumpkin, peeled, cooked and mashed (substitute butternut squash)
salt to taste
Method:
Add the water to a large pan and bring to a boil, before adding the maize meal. Continue cooking, stirring frequently, until the mixture forms a smooth porridge.
Add the pumpkin and sugar then stir-in the peanut butter and season with salt. Stir everything together to ensure all the ingredients are incorporated.
Continue cooking for a few minutes (add a little water if it's too thick). Serve hot with leafy greens or a greens-based stew.
