New Zealand Kiwi Fruit Bread: A New Zealand recipe for a teabread made from a sweetened flour and vegetable oil base blended with kiwi fruit.
Ingredients:
6 medium-sized ripe kiwi fruit
200g brown sugar
1 tsp finely-grated lemon zest
1 egg
120ml vegetable oil
180g plain flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
120g icing sugar
6–8 tsp lemon juice
Method:
Pare the kiwi fruit, remove the tough cores and chop the flesh finely.
Combine the kiwi fruit flesh in a large saucepan with the sugar and lemon zest. Bring the ingredients to a boil and cook stirring constantly, until the fruit becomes pulpy and starts to lose its colour. Take off the heat and set aside to cool.
In a separate bowl, beat together the eggs and oil. In another bowl, mix together the flour, baking powder and salt.
Stir the baking soda into the kiwi fruit mixture; continue stirring until you can visibly see bubbles forming.
Add the kiwi fruit mix to the egg mixture then add the flour and stir until the dry ingredients are just moistened.
Spoon the resultant batter into a well-greased loaf tin. Transfer to an oven pre-heated to 170°C and bake for about 55 minutes, or until the top is golden brown and a skewer inserted into the centre emerges cleanly.
Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.
For the icing (frosting), mix together the icing sugar and lemon juice until you have a spreadable consistency.
Spoon over the loaf and allow to drizzle down the sides. Allow to set then slice and serve.
