Neujahrspretzel (German New Year's Pretzels)
Neujahrspretzel (German New Year's Pretzels) is a traditional German recipe for a classic yeasted pretzel that is topped with icing and chopped nuts and which is traditionally served for New Year. In many New Year traditions, foods shaped into a ring or toroid, as they are never-ending represent wealth or good fortune for the coming year. This is why such traditional foods, like this one, remain popular during the New Year, even today.
Ingredients:
500ml milk
2 large eggs
100g butter
2 sachets active, dried, yeast
2 tsp salt
100g sugar
850g plain flour
150g icing sugar
1 tsp vanilla extract
50g slivered almonds, chopped
Method:
Combine the milk and butter in a small pan. Heat gently until the butter melts and the mixture is quite warm (you should be able to tolerate putting your finger in there for about 40 seconds).
In a bowl mix together the salt, sugar and 120g of the flour. Take the milk mixture off the heat, allow to cool slightly then beat in the yeast mixture until smooth.
Continue beating the mixture for 2 minutes then work in the eggs and 120g more of the flour.
Work in sufficient of the remaining flour to bring everything together as a soft dough. Turn onto a lightly-floured work surface and knead well until soft and elastic (at least 6 minutes). Bring the mixture into a ball and turn into a greased bowl. Cover and set aside in a warm place to rise for about 80 minutes, or until doubled in volume.
After this time knock the dough back then divide into two equal-sized pieces. Take the first dough half and shape into a rope about 75cm long and 3cm in diameter. Form a loop with the dough then flip over the ends so that they cross one another and touch the main circle. Press to secure the ends then repeat this process with the second piece of dough.
Arrange the pretzels on a greased baking tray, cover loosely and set aside to raise for 20 minutes.
Remove the covering, transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until nicely risen, golden brown and cooked through.
Transfer to a wire rack and allow to cool.
When cold, decorate as follows: Mix the icing sugar with the vanilla extract then work in sufficient warm water (about 2 tsp) to yield a fairly thin icing. Drizzle and spread the icing over the pretzels then sprinkle over the chopped almonds.
Serve to share at a New Year's eve party, or present as a gift on New Year's day.
