Ingredients:

60ml sherry vinegar
4 tbsp shallots, finely minced
120ml extra-virgin olive oil
1/4 tsp dried dill
salt and freshly-ground black pepper, to taste
60g nasturtium flowers, chopped
4 tbsp chives, chopped

Method:

Whisk together the olive oil and sherry vinegar in a bowl. Beat in the shallots, dill and chives then season to taste with salt and black pepper.

Work in the chopped nasturtium leaves and use as a dressing. This vinaigrette goes particularly well with fish and can also be used to dress salads and raw vegetables of all kinds.
