Ingredients:
1l chicken stock
8 nasturtium flowers, chopped
8 nasturtium leaves, chopped
70g celery, chopped
1 1/2 tbsp onion, finely chopped
1 sprig of parsley
salt and freshly-ground black pepper, to taste
Method:
Combine all the ingredients in a pan, bring to a boil then reduce the heat to a simmer. Continue cooking for about 7 minutes, until the ingredients are heated through and the nasturtium flavours have infused into the stock.
Strain through a fine-meshed sieve, adjust the seasonings to taste then divide between 6 warmed soup bowls and serve.
