Nasi Goreng Istimewa (Fried Rice Breakfast) is a traditional Indonesian recipe for a classic breakfast dish of left-over rice fried with onion, chilli powder, soy sauce and shrimp paste. In Indonesia, fried rice is a typical breakfast dish and often the remaining boiled rice from the night before is used. Here it's served simply with garlic, shrimp paste, soy sauce, onion and chilli.
Heat the oil in a pan or wok and use to fry the onion, garlic, chilli powder and shrimp paste for about 5 minutes, or until the onion is soft but not coloured. Add the rice and season with salt, to taste. Fry briskly, turning constantly, so that each grain is coated with the flavoured oil.
At this point add the soy sauce and mix again until the rice is evenly coloured. The chilli powder should turn the rice an orange colour. Serve immediately.
For a more substantial dish you can add chopped, cooked, meat along with the soy sauce.
