This is a recipe for Nantes cake, a traditional dessert from the city of Nantes. This is a very moist cake with a good almond flavour that also contains rum and which is finished with a covering of royal icing.
Ingredients:
150g of sugar
125g lightly-salted butter
125g of ground almonds
40g flour
70ml of dark rum
3 eggs
For the royal icing:
100g of icing sugar
1 1/2 spoon of rum
1 1/2 spoon of milk
Method:
Remove the butter from your fridge before starting to allow it to soften. Pre-heat your oven to 180°C (gas mark 6).
In a mixing bowl cream together the butter and powdered sugar then stir in the ground almonds. In another bowl beat together the eggs then add to the creamed almond mixture.
Sift over the flour, add 30ml dark rum and mix everything to combine. Turn the resultant batter into a greased and floured springform cake tin then transfer to your pre-heated oven and bake for 45 minutes. Once cooked the cake will be golden brown and springy to the touch. A skewer inserted into the centre will emerge cleanly.
Remove from the oven and cool in the tin for 10 minutes then unmould, set on a wire rack and allow to cool completely. Whilst the cake is cooling in the tin, prick all over the top with a skewer then pour over the remaining 40ml rum and allow it to soak in.
As you wait for the cake to cool prepare the royal icing. Soft the icing sugar into a bowl then beat in the rum and milk. Drizzle the resultant icing over the top of the cake once it’s completely cooled.
If you do not wish to use rum as a flavouring, orange blossom water or rose water also work well.
