A delicious local Niuean delicacy. The pia powder is taro starch, you can substitute Nigerian cocoyam powder. It's a street food snack and can be sweetened as a dessert or served for breakfast or as an accompaniment. For this recipe the coconut flesh is usually extracted with what looks like a giant orange squeezer but with hooks on the ends so the coconut flesh comes out crumbly.
Ingredients:
Water
Coconut flesh
Pia powder (starch)
Method:
Bring a pan of water to a boil, add the coconut flesh and boil for about 20 minutes.
Measure the pia powder in a coconut half them ix with scraped coconut until the texture of the mixture is solid enough to form dumplings.
Once the coconut flesh has boiled enough to become tender add the pia pwder dumplings until the mixture is very thick. Bring to a simmer and cook for about 20 minutes (it's cooked enough when the dumplings start to rise to the surface).
