A classic comfort food dish, wonderful for those dark winter evenings.

Ingredients:

550g butternut squash, peeled, de-seeded and cubed
4 pork loin chops
2 tbsp olive oil
1 tbsp wholegrain mustard
200ml crème fraîche
2 garlic cloves, crushed
2 tsp runny honey
1 generous handful of chopped parsley
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of water to a boil, add the butternut squash and cook for 4 minutes to par-boil. Drain thoroughly then turn onto a roasting tray and sit the chops on top (in a single layer). Season well then drizzle with the olive oil.

Transfer to an oven pre-heated to 180°C and roast for 12 minutes.

In the meantime, mix together the mustard, crème fraîche, garlic and honey in a bowl. When the chops have cooked for 12 minutes remove from the oven and spoon over the mustard mixture. Return to the oven and cook for a further 10 minutes, or until the meat is cooked through.

Remove from the oven, garnish with the parsley and serve accompanied by steamed or sautéed cabbage or leeks.
