Mushrooms à la Greque: Classic French recipe for a starter of mushrooms stewed in a balsamic vinegar broth served with chopped tomatoes.
Ingredients:
450g small button mushrooms (you can also use Field Mushrooms or button Brown Wood Mushrooms), whole
80ml olive oil
3 tbsp balsamic vinegar
2 garlic cloves, minced
1/2 tsp salt
2 tbsp brandy
2 tbsp parsley, chopped
1/2 tsp fresh thyme, minced
1/4 tsp dried oregano, crumbled
Method:
Simply add all the ingredients to a pan, bring to a simmer then simmer very slowly for 10 minutes, mixing a few times to meld the flavours. Set aside and allow the mushrooms to cool slowly in the cooking liquid.
Drain and serve in a bowl with toothpicks.
If desired, you can add tinned chopped tomatoes (drain the pieces first) to the mushrooms for more colour and different textures.
