Muqmad (Djibouti Preserved Meat)

Mugmas is a Djibouti classic that's often served as a snack or as an accompaniment to main courses. Shredded, it's also used as a topping for flatbreads, pancakes and hummus.

Ingredients:

500g of cubed beef or camel meat
2 tbsp ground coriander
1 tbsp ground cumin
4 garlic cloves, minced
Salt, to taste

Method:

Slice the meat thinly against the grain.

In a bowl, mix together the ground coriander, ground cumin, minced garlic, and salt to create your spice blend.

Rub this spice blend evenly over the dried meat slices, ensuring they are well coated. Feel free to adjust the amount of seasoning according to your personal preferences; I like some ground piri-piri chilli, for example).

Arrange the seasoned meat slices in a shallow dish or tray, arranging them in a single layer. Cover the dish with a clean cloth or plastic wrap and let it marinate in the refrigerator for at least 4 hours (but preferably overnight), to allow the flavours to penetrate the meat.

After marinating, pre-heat your oven to a low temperature (around 150°C). Arrange the marinated meat slices on a baking tray lined with parchment paper, ensuring they are spaced well enough apart to allow for even drying.

Transfer the baking tray to the preheated oven and bake the meat slices for about 3-4 hours, or until they are thoroughly dried and slightly crispy. Keep an eye on them during this time to ensure they do not burnin.

Once dried, remove the Muqmad from the oven and set aside so it cools completely on the baking tray before serving.

Serve the Djibouti Muqmad as a snack or side dish alongside traditional accompaniments such as flatbread, rice, or vegetables.

Store any leftover Muqmad in an airtight container at room temperature where it will keeop for up to a week; or in the refrigerator where it will keep for up to a month.
