Ingredients:
360g plain (all-purpose) flour
110g semolina flour
1 tsp salt
1 tbsp vegetable oil
Water (enough to make a dough)
Butter and oil for frying and brushing
Method:
In a large mixing bowl, combine the flour, semolina, and salt. Gradually add water until you have a soft and smooth dough. Knead it for about 10 minutes until soft and elastic.
Divide the dough into small balls (about the size of a golf ball). Let them rest, covered with a damp towel, for 20-30 minutes.
Take each dough ball and roll it out as thin as possible, like paper thin! If you’re using msemen, the thinner, the better.
Heat a non-stick pan over medium-high. Brush the dough with a mix of melted butter and oil (preferably olive oil), and then fry each one for about 2 minutes on each side until golden brown and slightly crispy. You want them soft but cooked through.
