Mozambique Peri-Peri is a traditional Mozambican recipe for a classic hot pepper sauce made with African peri-peri (piri-piri) chillies lemon juice, onions and tomatoes. The full recipe is presented here and I hope you enjoy this classic Mozambican version of: Mozambique Peri-Peri.

Ingredients:
2 tbsp groundnut oil
1 tbsp lemon juice
1 small red onion, minced
2 tsp minced garlic
12 dried African piri-piri (birds' eye) chillies soaked over night
2 medium tomatoes, minced
1 tsp lemon thyme
1/2 tsp lemon zest
1 tbsp finely-chopped parsley
1 tsp paprika
Method:
Add the groundnut oil to a pan and fry the onions and garlic until soft. Drain the chillies and mince then add to the pan along with all the remaining ingredients. Cook until the tomatoes soften and the sauce thickens. Transfer to a bowl and serve as a dipping sauce or accompaniment. If you want to keep the sauce add 6 tbsp groundnut oil and continue frying until all the water has disappeared.
