Moules Bretonnes a la Marinière (Breton Mussels Mariner-style) is a traditional French recipe (from Brittany) for a classic dish of local mussels cooked mariner-style with wine, shallots, parsley and thyme. This is a classic French dish, here cooked with local Breton mussels. Though not Breton in origin, this is a commonly prepared dish in Brittany, so I think deserves to be included with the other Breton recipes on this site.

Ingredients:

4l of mussels, wash in cold water, scrub well and remove the beards
80g butter
4 shallots, peeled and copped
200ml of dry white wine
1 tbsp chopped parsley
pinch of thyme leaves
1 bay leaf
Salt and freshly-ground black Pepper, to taste

Method:

Sort the mussels by removing damaged mussels or those that float on the surface of the water as well as dead ones whose shells won't close even if rapped on a table.

Melt the butter in a casserole dish over medium heat. Add the shallots and fry for 2-3 minutes.

Add the mussels, and cook, stirring vigorously so that they open.

Sprinkle over the white wine then add the leaf and a little thyme. Season to taste with salt and black pepper.

Cover the casserole dish and continue cooking over low heat for 8 minutes.

Add the parsley just before serving.
