Moqueca de Camarão (Prawn Stew) is a traditional Angolan recipe for a classic stew of prawns in a coconut milk and red palm oil base flavoured with onions, garlic, tomatoes and lemon juice. Ingredients:
1kg fresh prawns, peeled
2 onions, peeled and chopped
2 tomatoes, grated
2 garlic cloves, chopped
juice of 2 lemons
100ml coconut milk
100ml red palm oil
salt and freshly-ground black pepper, to taste
1 small bunch of coriander, chopped
Method:
Heat the palm oil in a non-stick frying pan. Add the onion and fry for 2 minutes then stir in the prawns, garlic, grated tomatoes, lemon juice and coconut milk. Season to taste with salt and black pepper. Bring the mixture to a simmer and cook for 5 minutes.
Serve on a bed of spaghetti or white rice and garnish with the chopped coriander.
