Moos Bukaani (Fried Plantains) is a traditional Somali recipe for a classic dessert of par-boiled plantains that are fried in butter, sugar and cinnamon that are finished with cardamom and served hot. Bring the water to a boil, add the (unpeeled) plantain and boil until the peel starts to separate from the fruit within. Remove from the water with a slotted spoon, peel and cut into pieces about 1cm thick.
Melt the butter in a pan then add the plantain slices, sugar and cinnamon. Cover and cook over medium heat until the liquid is syrupy. Add the ground cardamom, take off the heat and serve immediately.
