This rich tomato-based sauce is a favourite all over Southern Africa and it is typically served with fried beef steaks. This version comes from Zimbabwe where it is often served by itself with rice or pap.

Ingredients:

1 tsp vegetable oil
1 small onion, very finely chopped
1 garlic clove, very finely chopped
1 large tomato, blanched, peeled, de-seeded and finely chopped
1 tbsp white wine vinegar
1 tbsp water
1 tbsp coarsely-ground black pepper
1 tbsp sun-dried tomato purée
1 tbsp Worcestershire sauce
1 tbsp Muscovado sugar
1 tsp soy sauce
1 tsp Tabasco sauce (or any hot pepper sauce)

Method:

Heat the oil in a small pan. Add the onion and garlic and fry gently for about 8 minutes, or until golden brown. Add all the remaining ingredients, bring to a simmer and cook gently for 3 minutes.

Serve as a sauce drizzled over your favourite steak.
