Mămăligă is a traditional Moldovan recipe for a classic accompaniment of yellow cornmeal porridge flavoured with butter which can be served either hot or cold. The full recipe is presented here and I hope you enjoy this classic Moldovan version of: Mamaliga.

Ingredients:
300g yellow cornmeal
250ml cold water
1 tsp salt
100g butter
Method:
Whisk together the cornmeal and water to a smooth paste. Meanwhile, bring 1l of water to a boil in a large pan. Add the salt then gradually sprinkle in the cornmeal, stirring constantly to prevent lumps.
Continue cooking, stirring all the while, for 30 minutes over low heat until the excess water has been absorbed and the cornmeal is hot. Stir-in the butter and serve hot or cold. If serving cold slice with a thread and serve as wedges.
