Moi-Moi is a traditional Nigerian recipe for a savoury cake made from black-eyed peas that's served on rice or bread. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Moi-Moi.

Ingredients:
250g black-eyed peas soaked over night
700ml cold water
1 large onion, chopped
1 tbsp oil
6 ripe tomatoes, chopped
1 egg
salt and black pepper to taste
chopped parsley to garnish
Method:
Drain the soaked black-eyed peas and place in a pan. Add the water and boil for 20 minutes.
Drain and allow the black-eyed peas to cool to room temperature. Place all the ingredients (except the garnish) in a food processor and purée. Pour into a baking dish and bake in an oven at 160°C (320°F/Gas Mark 3) for 20 minutes until quite solid.
Allow to cool for 10 minutes then slice it up and serve on rice or Breads.
