Mofo Sakay (Spiced Fritters) is a traditional Malagasy (from Madagascar) recipe for a classic deep fried savoury fritter of a flour and water batter flavoured with curry powder, watercress, chillies and onions. Ingredients:
280g plain flour
1 1/2 tsp salt
1 tsp mild curry powder
1 tsp baking powder
3/4 tsp freshly-ground black pepper
360ml water
60g watercress, chopped
3 chillies, finely copped
2 large spring onions, chopped
1 tomato, chopped
oil for frying
Method:
Combine all the ingredients in a bowl and mix to a smooth paste.
Pour a 3cm depth of oil into a small pan over medium heat. Once the oil is hot, reduce the heat to medium-low.
Using a tablespoons gather up a portion of the batter mix. Use a second tablespoon to push this mixture into the hot oil (try and create a quenelle or elongated shape). Fry the fritters, turning frequently, until they are golden brown all over.
Remove from the oil and drain on kitchen paper. Serve hot, accompanied by rice.
