Muffins do not have to be sweet, as this classic recipe demonstrates. These savoury muffins make an interesting starter and are good served with a glass of well-chilled white or even rosé wine.
Ingredients:
250g plain flour
2 tsp baking powder
50g butter
50g sunblush tomatoes, drained and roughly chopped
50g goat's cheese, crumbled or cut into 5mm dice
2 sprigs of fresh Rosemary, leaves roughly chopped
150ml milk
2 medium eggs, beaten
salt and freshly-ground black pepper, to taste
Method:
Sift together the flour, baking powder, salt and black pepper into a large mixing bowl. Dice the butter, add to the flour mix and rub in with your fingertips until the mixture resembles fine crumbs.
Now stir in the tomatoes, goat's cheese and most of the rosemary (reserve some for garnish).
In a jug, whisk together the milk and eggs. Pour over the flour mixture and stir to combine (do not over mix). Pour into the wells of silicone muffin tins and sprinkle over the reserved rosemary leaves.
Transfer to an oven pre-heated to 180°C (gas mark 6) and cook for between 20 and 25 minutes, or until well risen, firm to the touch and golden brown.
Serve warm with drinks, or allow to cool and serve for picnics or barbecues.
