Milka Micic (Cheese-filled Crepes) is a traditional Serbian recipe for a classic dish of milk, egg and flour crepes that are filled with a mix of Feta cheese, cottage cheese and eggs before being oven baked and served. Ingredients:

For the Crepes:
3 eggs
360ml milk
480ml water
1/2 tsp baking powder
1/2 tsp salt
60ml oil
350 to 420g flour
butter for frying

For the Filling:
150g Feta cheese
300g cottage cheese
3 to 4 eggs

Method:

Combine all the ingredients for the crepes in a bowl and whisk until you have a fairly thin batter. Add a knob of butter to a frying pan and when hot add a ladle of the batter mixture. Spread out over the surface of the pan to form a thin pancake then fry until golden on the bottom then flip over and fry until golden on the other side. Transfer to an oven to keep warm as you prepare the remaining batter.

Once all the pancakes are cooked, crumble the Feta cheese in a bowl then whisk in the cottage cheese and eggs. Beat until smooth and well combined then add 1 or 2 tbsp in the centre of each crepe and fold the edges over to form a parcel.

Pack the filled crepes in a baking dish then place in an oven pre-heated to 160°C and bake for about 25 minutes, or until the filling is hot and set. Serve immediately.
