A scattering of pumpkin seeds, curry powder and smoked salmon will take your scrambled eggs to the next level

Ingredients:

2 tbsp pumpkin seeds
2 tsp rapeseed oil
100g (3 ½ oz) spinach, roughly chopped
1 tomato, chopped
2 garlic cloves, crushed
½ tsp ground turmeric
½ tsp curry powder (I used Madras)
¼ tsp smoked paprika
4 eggs, beaten with 4 tbsp milk or water
150g (1/3 lb) smoked salmon
toast, to serve (optional)

Method:

Turn the pumpkin seeds into a non-stick pan and toast over a high heat until they start to pop, then turn out onto a plate to cool.

Add the oil to a microwave-safe pan along with the spinach, tomato and garlic. Cook for 1-2 mins until the spinach has wilted, then add the turmeric, paprika, curry powder and eggs. Scramble the eggs for 20 seconds then beat with a fork, breaking up any set pieces. Continue cooking like this, in 20 second bursts until the eggs are almost completely set. Remove from the microwave (they will finish cooking as they rest) and rest for 2 minutes for the heat to equalize.

Serve with the salmon, on toast, if you like.
