Microwave Spicy Pork Stroganoff: A British recipe for a dish of pork fillet cooked in a cream base with paprika, mustard powder and tomato puree that's been adapted to be cooked quickly in the microwave.

Ingredients:

1kg pork fillet sliced into strips
50g butter
1 large onion, peeled and chopped
2 tbsp paprika
2 tsp mustard powder
150ml hot chicken stock
2 tbsp tomato purée
150ml sour cream
salt and freshly-ground black pepper, to taste

Method:

Sit the butter in a large bowl, transfer to your microwave (1200W) and cook on FULL power for about 45 seconds, or until melted.

Add the meat and onion, return to the microwave abd cook for 7 minutes, stirring the mixture after 4 minutes.

Sprinkle over the paprika and mustard powder, then stir to combine.

Now add the stock and tomato purée, then season to taste. Mix well, cover with clingfilm (plastic wrap) and snip two steam holes in the top.

Return to the microwave and cook for 3 minutes more. Now stir in the cream, return to the microwave and cook for 45 seconds more.

Set aside to rest for 3 minutes then serve immediately on a bed of buttered pasta.
