Microwave Spaghetti with Garlic Sausage: A British recipe for a dish of spaghetti served with garlic sausage, onion and herbs that's adapted to be cooked quickly in a microwave.
Ingredients:
1 tbsp oil
1 large onion, peeled and chopped
1 garlic clove, de-seeded and chopped
225g garlic sausage, cubed
1/4 tsp dried basil
1/4 tsp dried oregano, crumbled
1/4 tsp anchovy essence
1/2 tsp brown sugar
275g spaghetti
1.15l boiling water
1 tbsp olive oil
salt and freshly-ground black pepper, to taste
chopped parsley, to garnish
freshly-grated Parmesan cheese, to serve
Method:
Place the oil in a microwave-safe bowl. Transfer to your microwave (1200W) and heat on FULL power for 20 seconds.
Add the garlic and cook for 90 seconds then add tomatoes, garlic sausage, basil, anchovy essence, sugar and seasonings. Cover with clingfilm (plastic wrap) then snip two steam holes in the top. Transfer to your microwave and cook on FULL power for 5 minutes, stirring the mixture half-way through the cooking time.
Place the spaghetti in a deep bowl and pour over the boiling water, then add the olive oil. Cover with clingfilm (plastic wrap) and snip two steam holes in the top. Transfer to your microwave and cook for 10 minutes. Allow to stand, covered, for 10 minutes, then drain and add to the sausage mixture. Turn into a serving dish and cook for 2 minutes, until piping hot through.
Serve immediately, garnished with chopped parsley and sprinkled with grated Parmesan cheese.
