Microwave Sesame Wholemeal Rolls: A British recipe for a wholemeal flour roll that's designed to be cooked quickly in a microwave and which is finished with a sesame seed topping.
Ingredients:
1 tsp caster sugar
2 tsp active, dried, yeast
300ml lukewarm water
350g wholemeal flour
100g plain flour
1 tsp salt
2 tsp malt extract
2 tbsp oil
1 egg, beaten, to glaze
2 tbsp sesame seeds
Method:
In a mug, mix together the warm water, sugar and yeast until dissolved. Cover with a cloth and set aside to stand for 10 minutes, until the surface is frothy.
Combine the flours and salt in a large microwave-safe mixing bowl, then transfer to your microwave (1200W) and cook on FULL power for 20 seconds, or until just warm.
Form a well in the centre, add the yeast mixture along with the malt extract and half the oil. Mix with a spoon to form a pliable dough. Turn onto a lightly-floured work surface and knead lightly for about 8 minutes, or until smooth and elastic.
Return to the bowl, cover with clingfilm (plastic wrap) and set aside in a warm place until doubled in volume (about 80 minutes).
After this time, divide the dough into sixteen equal-sized pieces. Shape each piece into a small ball, pat into a roll shape then brush with the remaining oil. Set on greased baking trays, cover loosely with oiled clingfilm (plastic wrap) and set aside to rise for about 25 minutes, or until nicely risen and springy to the touch.
Place on a microwave-safe baking tray or a shallow dish lined with greaseproof (waxed) paper. Working in batches, transfer to your microwave and cook on FULL power for about 160 seconds. As soon as the roll are cooked brush the top with a little beaten egg and sprinkle over some sesame seeds. Transfer to a wire rack and allow to cool completely.
If you like a roll with a browned top then place under a grill for a few minutes to colour their surfaces.
