Prawn-stuffed Trout: A British recipe for a dish of trout stuffed with a mix of chopped prawns, butter, bread, lemon zest, parsley and eggs that are cooked in the microwave.

Ingredients:

50g butter
75g dry white breadcrumbs
100g peeled prawns, coarsely chopped
freshly-grated zest of 1 lemon
juice of 1 lemon
2 tsp finely-chopped flat-leaf parsley
salt and freshly-ground black pepper, to taste
1 egg, beaten
4 trout (about 280g each), cleaned and scaled
2 slices of lemon, to garnish
parsley sprigs, to garnish

Method:

Place the butter in a microwave-safe bowl. Set in your microwave (1200W) and cook on high power for 30 seconds to melt. Stir in the breadcrumbs, prawns, lemon zest, parsley and season to taste. Add the egg and mix thoroughly to bind.

Divide this mixture into four even portions and use to stuff the body cavity of each trout. Arrange the trout on a microwave-safe dish then sprinkle with the lemon juice. Cover with clingfilm (plastic wrap) and snip two holes in the top for steam to escape. Place in the microwave (1200W) and cook for about 4 minutes, or until the trout flakes easily with a fork.

Remove from the microwave and allow to stand for 3 minutes. Transfer to a serving dish, garnish with the sliced lemon and parsley sprigs and serve immediately.
