An easy weeknight meal, with a nutty and spicy flavour — you make most in the microwave. This works excellently well with leftover roast (chicken, turkey, guineafowl). Substitute for the cooked chicken. You can use normal peanuts, but toasted peanuts give a much better flavour.

Ingredients:

250g (9 oz) pack rice noodles
2 ready-cooked chicken breasts, skinned and shredded
1 red bell pepper, deseeded and sliced
2 handfuls beansprouts
3 tbsp chilli sauce (either hot sauce or sweet chilli sauce, depending on taste)
4 tbsp light soy sauce
4 spring onions, sliced
50g (1 ¾ oz) toasted peanuts, coarsely chopped
20g (3/4 oz) fresh coriander, coarsely chopped

Method:

Cook the rice noodles according to the pack instructions. Meanwhile, combine the chicken and bell pepper in a microwave-proof dish and cover. Microwave on HIGH for 2 mins, until piping hot.

Drain the rice noodles and turn into a bowl. Stir through the beansprouts. Whisk the chilli sauce and soy sauce together, then stir through the noodles, along with the chicken, pepper and spring onions.
Scatter over the peanuts and coriander, then serve.
