Microwave Honey Gingerbread: A British recipe for a gingerbread flavoured and sweetened with honey that's designed to be cooked quickly in a microwave, shown in slices.

Ingredients:

100g butter
100g soft brown sugar
4 tbsp thick honey
2 eggs, beaten
225g plain flour
1 tbsp ground ginger
1 tsp bicarbonate of soda
25g dried mixed fruit

Method:

Combine the butter, sugar and honey in a microwave-safe bowl. Transfer to your microwave (1200W) and cook on FULL power for 2 minutes, until the ingredients have melted.

Stir to combine, then beat in the eggs. In the meantime, sift together the flour, ginger and bicarbonate of soda into a bowl. Toss the dried fruit in this mix to coat, then fold in the egg mixture.

Line an 18cm square microwave-safe dish with clingfilm (plastic wrap), then grease the base and line with greaseproof (waxed) paper.

Spoon in the gingerbread batter, smooth over the top, then transfer to your microwave and cook on MEDIUM power for 9 minutes.

Turn out onto a wire rack to cool. Once cold, cut into slices and serve.
