Microwave Chocolate Sponge Pudding: A British recipe for a chocolate sponge pudding, served with fudge sauce that's adapted to be cooked quickly in the microwave.
Ingredients:
100g butter
100g caster sugar
2 eggs, beaten
75g self-raising flour
pinch of salt
15g cornflour (cornstarch)
15g cocoa powder
2 tbsp hot water
Method:
Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.
Sift together the flour, salt, cornflour and cocoa powder into a bowl, then stir into the creamed mixture. Add just enough of the hot water to give you a dropping consistency.
Either thoroughly grease a pudding basin or line with clingfilm (plastic wrap). Spoon in the sponge batter then cover the basin securely with clingfilm (plastic wrap). Snip two holes in the top to allow steam to escape, then transfer to your microwave (1200W). Cook in FULL power for 6 minutes then set aside to rest for 6 minutes. After this time, remove the covering then carefully invert the pudding onto a serving plate.
Cut into wedges and serve immediately accompanied by vanilla custard or fudge sauce.
