Forget microwave mug cakes, which are all the rage at the moment — if you're after some serious indulgence in just 15 minutes, this easy chocolate, peanut butter and jam brownie recipe is sure to hit the spot.
Ingredients:
75g (2 2/3 oz) butter, plus a little extra for greasing
50g (1 3/4 oz) peanut butter
1 egg
25g (1 oz) cocoa powder
50g (1 3/4 oz) plain flour
100g (3 ½ oz) sugar
few teaspoons of your favourite jam (or curd)
Method:
Combine the butter and peanut butter to a microwave-safe bowl and cook on HIGH for 30 seconds to melt. Remove from the microwave and stir thoroughly. Allow to cool slightly then beat in the egg. Take a second microwaveable dish (about 15cm [6 in] in diameter) and grease with butter then line with clingfilm (plastic wrap), making sure this overhangs the edges of the dish. Turn the peanut butter mix into the lined dish then sift over the cocoa powder and flour and add the sugar. Mix gently to form a thick, sticky paste. Smooth the top of the mixture with the back of a large spoon.
Using a teaspoon, make crater-holes in the top of the brownie mixture and fill each generously with jam as it will melt and bubble down when cooked. Pop in the microwave for 3-4 mins on HIGH.
Remove and set aside leave to cool for 15 mins (it will carry on cooking as it cools); the clingfilm overhang will help you remove easily from the bowl.
