Microwave Chimpanzee Cheesecake

Ingredients:

4 tbsp butter
175g Graham cracker (or digestive biscuit) crumbs
2 tbsp granulated sugar
500g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
150g granulated sugar
3 eggs
2 tsp lemon juice
3 medium bananas, mashed
sliced bananas, for topping

Method:

Place the butter in a microwave-safe bowl, place in your microwave (1200W) and cook for 30 seconds on high power, until melted. Take out of the microwave and stir in the biscuit crumbs and 2 tbsp sugar. Mix well then press the mixture into the base and sides of a pie dish.

Place in your microwave and cook on high powder for 1 minute. Remove from the microwave and set aside.

Soften the cream cheese then beat until fluffy. Beat in the sugar then add the eggs, one at a time, beating thoroughly until incorporated after each addition. Finally beat in the lemon juice then blend in the bananas.

Pour this mixture into the prepared crust then place in your microwave and cook on 70% (medium-high) power for 5 to 6 minutes, or until the filling is cooled and set. Remove from the microwave and allow to cool completely before refrigerating over night.

Decorate with sliced bananas before slicing and serving.
