Microwave Banana and Walnut Loaf: A British recipe for a banana cake containing walnuts that's adapted to be cooked quickly in a microwave, shown here as slices.
Ingredients:
175g self-raising flour
pinch of salt
pinch of bicarbonate of soda
40g butter
75g caster sugar
1 egg, beaten
175g bananas, peeled and mashed with a fork
75g walnuts, coarsely chopped
a little milk, as needed
Method:
Sift together the flour, salt and bicarbonate of soda into a bowl. Dice the butter, add to the flour and rub in with your fingertips until the mixture resembles fine crumbs.
Now stir in the sugar, egg, mashed bananas and walnuts. Mix all the ingredients until well blended. You are looking for a soft batter, if too stiff work in a little milk, as needed.
Lightly grease a microwave-safe loaf tin (glass, ceramic or silicone). Line the base with greaseproof (waxed) paper then spoon in the cake batter.
Transfer to your microwave (1200W) and cook on FULL power for 4 1/2 minutes. Allow to stand for 10 minutes before turning the cake out onto a wire rack to cool completely.
Serve sliced and buttered.
