Ingredients:
4 thick slices white bread
50g (2 oz) butter, softened
1 large banana, peeled and sliced
2 eggs
85g (3 oz) soft, light brown sugar, plus 1 tbsp extra
large pinch cinnamon
450ml (1 4/5 cups) milk
1 tbsp cornflour (cornstarch)

Toast the bread, spread with the butter then cut each slice into 6 equal pieces. Arrange these, butter side up, with the banana slices in a microwavable dish (approximately 23cm [9 in]) square by 5cm [2 in] deep).
Beat together the eggs, sugar, cinnamon and milk in a jug. In a small bowl, mix the cornflour (cornstarch) with a little of the milk, until you have a smooth slurry, then stir this into the jug with the milk and eggs. Pour this mixture over the bread and banana, then sprinkle over the extra sugar.
Cook, uncovered, in the microwave on High for 8-10 mins. Allow to stand for 5 mins before serving.
