Air Fryer Corn on the Cob

Corn on the cob is an excellent and quick accompaniment to a range of meals and it’s a dish that is easily and quickly prepared in the air fryer. I’m serving the corn here with an approximation of Mexican street dressing. A blend of mayonnaise and sour cream, Tajin seasoning and fine-grated Pecorino cheese (traditionally cotija cheese would be used, but I can’t source that).
Ingredients:
2 ears of Corn, shucked
2 tbsp of butter (for brushing)
2 tbsp mayonnaise (or as desired)
2 tbsp sour cream (or equal parts if you use more mayo)
2 tsp
Tajin seasoning (or more as desired)
4 tbsp finely-grated cotija (or pecorino) cheese
Lime wedges for serving
Salt and freshly-ground black pepper, to taste
Method:
Remove the husk and silks from the corn cob. If you need to, cut them into half to fit in the air fryer basket (mine just fitted diagonally).
Pre-heat your air fryer at 200°C (400°F) for 5 minutes.
Take a bowl, and season the melted butter with salt, and freshly-ground black pepper; give this a good mix. Apply the seasoned butter onto the ears of corn.
Put the seasoned corn in the pre-heated air-fryer basket and cook for 12-15 minutes, or until most of the corn kernels turn brown. Flip the corn halfway through the cooking process to ensure they cook evenly.
Remove the corn from the air fryer then push a wooden skewer into the corn.
In a small bowl, mix together the mayonaise and sour cream. Brush the mayonnaise mix generously on the sides of the corn then spoon the Tajin seasoning over the corn, before sprinkling the cotija (or pecorino) cheese on top.
Serve with lime wedges.
