This is a bold and flavoursome dry rub to be used with strongly-flavoured fish that incorporates many traditional Mexican elements in its construction. The quantity should be sufficient for four good-sized fish fillets.
Mix the spices well together (if whole grind in a pestle and mortar). Rub over strongly-flavoured fish such as mackerel fillets or tuna steaks then cook by frying in olive oil.
