Mchicha (Spinach, Coconut and Peanuts) is a traditional Tanzanian recipe for a classic accompaniment of spinach fried with grated coconut and chopped peanuts until wilted. Mchicha is the Swahili for amaranth leaves, which is the original leafy green used in this recipe. I've substituted spinach to make the recipe more accessible, but if you have access to amaranth leaves then use these instead. The recipe can also be made with cocoyam (taro) leaves, just blanch them in salted water first.
Ingredients:
4 tbsp butter
700g spinach, washed and chopped
100g grated coconut
100g finely-chopped peanuts
salt and black pepper, to taste
Method:
Melt the butter in a large saucepan and add the spinach, grated coconut and chopped peanuts. Toss lightly to combine all the ingredients and cook until the spinach has wilted and cooked through.
Season with salt and pepper and serve as a vegetable accompaniment with any meat, poultry or fish dish.
