This is a classic Bahamian drink, versions of which are made throughout the Caribbean. The main constituent is mauby bark (the dried bark of certain trees in the Colubrina genus including Colubrina elliptica (also called behuco indio) and Colubrina arborescens, a small tree native to the northern Caribbean and south Florida. You can often buy the dried bark in West Indian or Caribbean markets.

Ingredients:

60g mauby bark
water

Method:

Combine the bark in a pan with 1.8l of water. Bring to a boil and continue boiling until the volume of liquid has reduced to 600ml. Allow to cool bottle and store in the refrigerator. To drink combine 2 tsp of the mauby solution with 4 heaped tablespoons of dark sugar and 240ml of either still or sparkling water.
