Matzo Brei

This is a typical Jewish breakfast often served at Passover that's basically a version of eggy bread (French toast).

Ingredients:

8 unsalted matzos
2 large eggs, beaten
salt, to taste
6 tbsp vegetable oil

Method:

Gently hold the matzos under hot water just long enough to wet both sides (but not so long that they turn soggy) then drain and tear into 5cm pieces before placing in a bowl. Add the egg and gently turn the matzo pieces so that they are coated.

Heat the vegetable oil in a large frying pan then add the eggy matzo pieces, spreading them over the base of the pan (you may have to cook in several batches, use about 2 tbsp oil per batch). As they cook turn the pieces several times until they are cooked a golden brown and are crisp on both sides. Serve warm, accompanied with ample salt (serves 4).
