Matlebekwane dumplings

This is a classic style of dumpling prepared through much of Southern Africa. They can be leavened with yeast or baking powder, though the yeasted versions (as presented here) tend to be fluffier and have more flavour.
Ingredients:
240g of pastry/cake flour (low gluten)
2 tsp dry yeast
1 tsp sugar
1/4 tsp salt
enough water to bring it together (about 150ml)
Method:
Sift the flour and sugar into a bowl then stir through the yeast and sugar. Now mix in enough of the water to bring everything together as a slightly loose dough. Turn into a greased bowl, cover and set aside for 40-60 minutes until doubled in volume.
This is a good point to start your stew as the dough rises.
When the dough has risen, knock it back and divide into walnut-sized balls. Arrange on a baking tray, cover with a cloth and set aside in a warm spot to rise again for about 30 minutes.
Add the dumplings to your stew/soup about 30 minutes before it's time to serve so they have a chance to cook.
