Marigold Cheese Soup

Ingredients:

50g butter
70g celery, minced
70g green bell pepper, minced
100g onions, minced
100g carrots, minced
4 tbsp plain flour
1l chicken stock
400g Cheddar cheese, grated
salt and freshly-ground black pepper, to taste
3 tbsp marigold petals, minced
250ml milk
250ml cream
2 tbsp dry sherry
chopped chives or parsley, to garnish

Method:

Melt the butter in a pan and use to fry the celery, bell pepper, onions and carrots for about 10 minutes, or until softened and cooked through. Scatter the flour over the top then mix into the butter to form a roux. Whilst stirring constantly slowly add the stock. Continue stirring the mixture until slightly thickened then lower the heat.

Slowly stir in the cheese, mixing gently until melted. Add the marigolds and season with salt and pepper before stirring in the milk, cream and sherry. Allow the mixture to heat through (but do not boil). Ladle into warmed soup bowls, garnish with chives or parsley and serve.
